Father’s Day, a day set aside to honor our fathers, dads, pops or whatever you call that special person in your life. It is also the day you honor and remember your late father. Share those memories with those in your family who may not have memories of that person. Then there is the person who served as a father figure in your life.
Many families have a cook-out at home as most dads love to cook on the grill. This is a great relaxing way to spend the afternoon with family and friends. Make your side dishes the day before so they will be nicely chilled and flavored.
Let’s start by making Classic Beef BBQ Ribs.
Pre-boil the ribs (15 to 18 ribs) for about 20 minutes. Cool and coat the grill with cooking spray and preheat for 5 minutes. In a microwave bowl combine 1/2 cup ketchup, 2 tablespoons mustard, 1 tablespoon Worcestershire sauce, one minced garlic and one tablespoon brown sugar. Mix well and baste the ribs well while cooking on the grill. Baste the ribs every three minutes. When the ribs are done — serve with left over sauce.
Texas Pork BBQ Chop
Remove all visible fat from 8 center cut chops. In a small saucepan combine 1 teaspoon black pepper, 1 cup brown sugar, one cup ketchup, 1 large chopped green onion, 5 minced cloves and 2 teaspoons chili powder. Simmer on low heat for 15 minutes. Preheat the grill and place the chops on the grill. Place heaps of the sauce on top of each chop and grill on both sides 4 to 5 minutes.
Grilled Italian Sausages
Cut 4 pounds of low fat Italian sausages into equal size portions. Lightly spray the grill with cooking spray and pre heat for 5 minutes. Place the sausages on the grill along with 4 green peppers cleaned and sliced and 2 white onions cut into strips. Finally sprinkle with salt and pepper. Grill for 8-10 minutes and serve on Italian bread as hoagies or separate as the main dish.
